On cold January mornings, our 1,200 cashew trees burst into pale pink-white blossoms. Each tiny flower is a promise — if the sea breeze stays gentle and the bees arrive, one flower becomes one cashew. My father taught me to read the bloom. A dense flowering year means a good harvest. We walk the orchard every morning, watching, waiting. No app tells us this. Our feet do.

By February, the first cashew apples (काजू बोंड) begin to appear — bright red-yellow, juicy, tangy, packed with Vitamin C. By March the trees are full of them. The actual nut hangs below like a curved pendant. Most people buying cashews have never seen this. We hand-pick every single one at peak ripeness — not before, not after. On a farm, one missed day changes the flavour.

March and April are harvest months — the whole family is on the farm. Raw cashews are spread on woven bamboo mats (चटई) under the open Konkan sky for 2–3 days. No dryers, no machines — just sunlight and the sea breeze from the Arabian coast. This method, unchanged for generations, pulls out moisture and deepens the flavour. My mother has been laying these mats since she was a teenager. She still checks them by touch, not by a timer.

The dried nuts go through steam to safely release the outer shell — which holds a toxic oil (CNSL) the industry often handles with chemical solvents. We don't. Steam only. What comes out is the real cashew — ivory-white, naturally fragrant, never bleached, never treated. The same process used in this village for 60 years. Chemicals cost less. We choose not to.

The cashew tree (Anacardium occidentale) is remarkable — it produces both a fruit AND a nut. Our Ratnagiri trees, fed by the laterite soil and monsoon rains, live for 30+ years and produce some of India's finest cashews.
💬 Order Cashew on WhatsAppThe bright cashew apple is actually the false fruit. It contains 5× more Vitamin C than an orange. In Konkan villages, it is fermented into local vinegar (आमटी) or made into juice and jam.
Unlike all other nuts, the cashew grows outside its fruit — hanging below the cashew apple in a hard shell. The shell contains CNSL, a caustic oil, which is why cashews must be carefully processed before eating.
Ratnagiri's red laterite soil, combined with the sea breeze (समुद्री हवा) from the Arabian Sea, gives local cashews a distinctive creaminess and flavour that cannot be replicated elsewhere.

Real cashews smell slightly sweet and buttery, like fresh milk. A stale or plastic smell means they have been in cold storage for months. Ours are packed within 48 hours.
Good cashews are ivory to pale gold — never bright white (bleached) or grey (old). Our W180 Jumbos have a natural warm ivory tone from sun-drying on bamboo mats.
A fresh cashew should snap cleanly, never bend. Bending means moisture has entered — poor storage or old stock. Ours are vacuum sealed at harvest to lock in crunch.
Quality cashews leave a clean, creamy aftertaste. Any bitterness means rancid oils from poor storage. Ratnagiri cashews are naturally sweet — the red laterite soil gives them their flavour.
